Doused Apricots served with La Tur Cheese

La Tur is a cheese from the Piedmont region of Italy. It is made with a blend of cow, sheep, and goat milk.  Soft, creamy cheese adds the satisfying finish to these sweet tart apricots.

This recipe works well with any stone fruit. Stone fruit is a fruit that has a hard seed in the center like, cherries, peaches, plums, and apricots-all excellent. One of my favorites is apricots for the subtle tart flavor and beautiful color. The wine adds a delicious aroma. Pick a favorite white wine that is sweet and rich like ay) wine that has a fruity or citrus finish most German and California Gewurztraminers or Rieslings (not dry) would be a nice choice.


Serves 6


Ingredients

18 apricots, ripe and cut in half and pits removed

8 oz. dessert white wine

¼ cup honey

1 tsp salt

6-12 oz. La Tur Cheese of a soft full-flavored cheese.


Instructions

  1. Preheat the oven to 350°F. Spray non-stick spray on an oven safe, shallow pan.

  2. Place apricots into the shallow baking dish.

  3. Drizzle the apricots with the wine, honey, and salt.

  4. Bake the apricots for 15 -30 minutes. Turn each apricot over in the pan, halfway through baking.

  5. Cook until the apricots are soft and the wine has cooked down to a thin sauce.


I like to cook these before dinner and let them sit and cool down. Serve room temperature or warm and pass the cheese around, so everyone can place a creamy dollop of the soft cheese on top.
